A pet food is provided, comprising an edible, formulated, protein-rich body having a seared appearance, a moisture content of 20 % to 60 % by weight and a structure providing firmness of texture, such as to be resilient under initial pressure of biting by a pet animal and highly palatable. Protein content is preferably at least 20 % by weight. The seared appearance is produced by exposure to a source of dry heat, such as in roasting, grilling, frying and baking and enhances palatability. Palatability may be enhanced further by reducing the pH of the food body, for example by applying an acid coating and allowing the acid to react with sugars in the body in a thermal browning reaction.
La présente invention concerne de la nourriture pour des animaux de compagnie qui contient une masse comestible, préparée, riche en protéines ayant un aspect saisi, une teneur en humidité comprise entre 20 % et 60 % en poids et une structure qui confère une texture ferme telle que si elle était élastique sous la morsure initiale par un animal de compagnie et qui présente en outre un goût agréable. La teneur en protéines est au moins égale à 20 % en poids. Pour que le produit ait l'aspect saisi voulu, on l'expose à une source de chaleur sèche telle que celle qui existe lorsqu'on rôtit, grille, frit et cuit au four, ce qui renforce le goût agréable. Pour améliorer encore le goût agréable, on réduit le pH de la masse de l'aliment, par exemple, en appliquant un revêtement acide et en laissant l'acide réagir avec les sucres de la masse lors d'une réaction thermique de Maillard.
