The present invention relates to an edible phytosterol or phytostanol composition useful in the food industry and to methods of preparing such an edible composition. The edible composition comprises a phytosterol or phytostanol, an isolated water soluble protein, and optionally an emulsifier, wherein the weight ratio of theprotein to the phytosterol or phytostanol is from about 0.2:1 to about 10:1, and the weight ratio of the emulsifier to the phytosterol or phytostanol is from about 0.2:1 to about 5:1. The invention also relates to edible products containing such a composition and to methods for the production of the edible products.
L'invention concerne une composition comestible de phytostérol ou de phytostanol utile dans l'industrie alimentaire, ainsi que des procédés de préparation d'une telle composition.
