Plants are described containing DNA sequences which are capable of modifying the carbohydrate or protein concentration and the carbohydrate or protein composition. DNA sequences described reduce in the plant the ADP- glucose-pyrophosphorylase activity and thereby the starch concentration and at the same time increases the mono- and oligosaccharide concentration. Other DNA sequences reduce or increase the protein concentration. Plants that contain these sequences are suitable inter alia for the extraction of sugar or as protein-enriched food or fodder.
