This invention relates to polyol fatty acid polyester compositions having improved physiological properties, organoleptic properties (i.e. mouth feel), liquid/solid stability and chemical stability. These polyol fatty acid polyesters are characterized in that (a) not more than about 0.6% of the fatty acid groups contain three or more double bonds, not more than about 20% of the fatty acid groups contain two or more double bonds, and not more than about 35% of the fatty acid double bonds are trans double bonds; (b) the polyesters have an iodine value between about 15 and about 60; and (c) the solid fat content/liquid solid stability ratio is not greater than 0.25. This invention also relates to a process for preparing these improved polyol polyester compositions.

La présente invention concerne des compositions de polyester d'acide gras polyolique ayant des propriétés physiologiques, des propriétés organoleptiques (c.-à-d., sensations buccales), une stabilité liquide-solide et une stabilité chimique améliorées. Ces polyesters d'acide gras polyoliques sont caractérisés par le fait (a) qu'au maximum 0,6 % environ des groupes acide gras contiennent trois doubles liaisons ou plus, qu'au maximum 20 % environ des groupes acide gras contiennent deux doubles liaisons ou plus et qu'au maximum 35 % environ des doubles liaisons des acides gras sont des doubles liaisons trans; (b) les polyesters possèdent un indice d'iode se situant entre environ 15 et environ 60; et (c) le rapport de la teneur en matières grasses solides par rapport à la stabilité liquide-solide n'excède pas 0,25.
