A polypeptide that exhibits wide substrate specificity, having the activity of unsaturating .omega.3-fatty acids capable of efficiently forming an unsaturated bond at the .omega.3-position; and a polynucleotide coding for the polypeptide. Mass production of n-3 PUFAs can be realized by in vivo expression of this polynucleotide. For example, a polypeptide having the activity of unsaturating .omega.3-fatty acids and consisting of an amino acid sequence of SEQ ID NO: 1 and a polynucleotide coding for the polypeptide having the activity of unsaturating .omega.3-fatty acids and consisting of a base sequence of SEQ ID NO: 2 or 3 are useful for the production of n-3 fatty acids.
Polypeptide qui présente une large spécificité vis-à-vis de substrats, ayant un effet consistant à rendre insaturés des acides gras .omega.3 et capable de former de façon efficace une liaison insaturée en position .omega.3 ; et polynucléotide codant pour le polypeptide. On peut effectuer la production en masse de PUFA (acides gras polyinsaturés) n-3 par l'expression in vivo de ce polynucléotide. Par exemple, un polypeptide ayant un effet consistant à rendre insaturés des acides gras .omega.3 et constitué d'une séquence d'acides aminés de la SEQ ID n° 1 et un polynucléotide codant pour le polypeptide ayant un effet consistant à rendre insaturés des acides gras .omega.3 et constitué d'une séquence de bases de la SEQ ID n° 2 ou 3 sont utiles pour la production d'acides gras n-3.
