There is disclosed a process for producing magnesium containing potable mineral water comprising the steps of: adding a magnesium containing salt to a water sample; dissolving carbon dioxide in said water sample; and optionally adding one or more carbonate containing compounds; so as to provide potable water containing greater than 130 mg 1-1 of dissolved magnesium cations, greater than 650 mg 1-1 of bicarbonate, and having a pH between 6.0 and 8Ø
