The present invention provides a hardstock fat which is suitable for stabilizing a dispersion of a non-fat phase in a triglyceride oil, including liquid margarines, which hardstock fat consists of a mixture of triglycerides, characterized in that: at least two triglycerides having a melting point ~55~C each have a concentration of at least 5 wt.%, the amount of triglycerides having fatty acid residues with a difference in chain length of the longest and the shortest residue of at least four carbon atoms is at least 15 wt.% and the amount of triglycerides with a melting point of 25-55~C is <= 25 wt.%.

L'invention concerne un corps gras à l'état solide conçu pour stabiliser une dispersion d'une phase non grasse dans une huile de triglycéride qui comprend des margarines liquides, ledit corps gras à l'état solide étant constitué d'un mélange de triglycérides caractérisé en ce qui suit: au moins deux triglycérides possèdent un point de fusion ~55 ·C, chacun étant présent dans une concentration d'au moins 5 % en poids; la quantité de triglycérides comportant des résidus d'acides gras avec une différence de longueur de chaîne entre le résidu le plus long et le résidu le plus court d'au moins quatre atomes de carbone est d'au moins 15 % en poids; et la quantité de triglycérides ayant un point de fusion de 25-55 ·C est <= 25 % en poids.
