Water continuous, pourable compositions comprising more than 50 to 80 wt % fat, an emulsifier having a hydrophilic/lipophilic balance value of at least 7, an antispattering composition and optionally a biopolymer in an amount of at most at most 0.3 wt % on total composition weight are suitable frying compositions.

L'invention porte sur des compositions liquides à phase continue d'eau contenant plus de 50 à 80 % en poids de graisse, un agent émulsifiant présentant une valeur d'équilibre hydrophile/lipophile d'au moins 7, une composition anti-éclaboussures et, éventuellement, un biopolymère dans une quantité maximale de 0,3 % en poids sur le poids total de la composition. Ces compositions conviennent pour les fritures.
