L'invention concerne un dextrose pulvérulent caractérisé en ce qu'il présente une richesse en dextrose au moins égale à 99 %, une teneur en forme cristalline .alpha. au moins égale à 95 %, une teneur en eau au plus égale à 1% et une compressibilité, déterminée selon un test A, au moins égale à 80 N, de préférence comprise entre 100 et 200 N. L'invention concerne également l'utilisation dudit dextrose pulvérulent comme édulcorant ou excipient, en particulier dans des compositions alimentaires ou pharmaceutiques, par exemple pour la préparation de confiseries ou de comprimés à sucer, à mâcher, à dissoudre ou à avaler.
