A B S T R A C T An isohumulone-containing product for use in the flavouring of food or beverages comprises a water- insoluble metal ion-isohumulone complex and an alkali metal compound which in the presence of water reacts with the metal ion in the metal ion-isohumulone complex more strongly than does the isohumulone. The molar ratio of the alkali metal compound to the isohumulone present in the metal-ion isohumulones complex is at least 0.2. The product when added to water or an aqueous medium forms an aqueous solution of the alkali metal salt of isohumulone, the concentration of isohumulones in the solution is not more than 5% and the ratio of insoluble material to the isohumulones in She solution being between 0:1 and 1:1.
