The present invention is a process for producing an aliphatic acid ester of carbohydrate comprising the steps of preparing an emulsion containing a salt of aliphatic acid and aqueous solution of carbohydrate or its derivative, obtening a solid by removing water from said emulsion, and reacting said solid and an aliphatic acid ester.

L'invention concerne un procédé permettant de produire un ester d'acide aliphatique d'hydrate de carbone. Ce procédé comprend les étapes suivantes : on prépare une émulsion contenant un sel d'acide aliphatique et une solution aqueuse d'hydrate de carbone ou d'un dérivé de celui-ci, on extrait l'eau de ladite émulsion afin d'obtenir un solide, et on fait réagir ledit solide et un ester d'acide aliphatique.
