ABSTRACT Heretofore gas contained in solution in beverages in sealed containers has been carbon dioxide so that upon opening of the package the carbon dioxide readily comes out of solution and the beverage effervesces to form a head of froth. By the present invention, however, release of carbon dioxide is expedited by forming a sealed package of the beverage in which the beverage has in solution therewith at least one of the gases selected from the group consisting of an inert gas and carbon dioxide; opening the sealed package and subjecting the beverage to an excitation medium to an extent and for a time sufficient to cause some of said gas or gases to come out of solution and cause or contribute to the formation of the head of froth.
