A process and apparatus for the preparation of cereal flakes which comprises extruding a dough at an elevated temperature from an extruder-cooker through a thin, flat slit-like orifice to form an expanded and puffed strand which is stretched until the density is from 75 to 200 g/litre to achieve the desired flaky, layered, crumbly texture, then cut into the final individual flakes which are finally roasted.
