In the field of dried fruits or dried vegetables, pre-drying treatments aim at improving the preservation, appearance, texture and sweetness of the dehydrated fruit while retaining the natural characteristics (flavours/colours) of the fruit. In the present process, the cellular structure of fruits or vegetables tissues is disrupted by a thermal process and the natural soluble content of the disrupted tissues is partially and completely replaced by selected ingredients contained in a infusion medium. The infused product is then partially dehydrated to an appropriate water activity. Thus, the objective of the process is to substantially degrade the natural characteristics of fruit or vegetable tissues and use the disrupted tissue as a template for ingredients. The key advantage of this process is to rapidly obtain a homogeneous distribution of ingredients within the porous disrupted tissues, allowing for the preparation of a spectrum of products with exotic colours, textures, and organoleptic properties. The treated product pieces may be packaged in their original form or as a shaped mash of smaller pieces.
