ABSTRACT A method of producing a wort for use in brewing in which a solid material is extracted with hot water and the wort so formed is separated from the insoluble matter, and in which the solid material is treated with a polar organic substance prior to extraction. In this way, the treated solid material can be made less susceptible to the rapid formation of stale flavours in subsequent processing.
