A process for making an oligosaccharide composition comprises producing an aqueous composition that comprises at least one oligosaccharide and at least one monosaccharide by saccharification of starch, membrane filtering the aqueous composition to form a monosaccharide-rich stream and an oligosaccharide-rich stream, and recovering the oligosaccharide-rich stream. The oligosaccharide-rich stream is slowly digestible by the human digestive system, and can be used as a low-calorie food ingredient that is high in soluble dietary fiber.

L'invention a trait à procédé de production d'une composition oligosaccharidique, qui consiste : à produire, par saccharification d'amidon, une composition aqueuse contenant au moins un oligosaccharide et au moins un monosaccharide ; à procéder à la filtration sur membrane de la composition aqueuse afin de former un flux riche en monosaccharides et un flux riche en oligosaccharides ; et à récupérer le flux riche en oligosaccharides. Le flux riche en oligosaccharides est destiné à une digestion lente par le système digestif humain, et peut servir d'ingrédient alimentaire hypocalorique doté d'une teneur élevée en fibres alimentaires solubles.
