Compositions comprising ergothioneine and a trimethylamine absorber are provided. Also provided are methods for preventing, reducing or minimizing the fishy, amine odor, due to trimethylamine, that is associated with the processing and/or storage of a preparation containing ergothioneine, by combining with the ergothioneine, during processing or prior to storage, a trimethylamine absorber in an amount sufficient to prevent the detection of any trimethylamine odor by the human nose. A method is further provided for ameliorating the methylamine odor associated with an aqueous ergothioneine-containing preparation after it has developed a fishy trimethylamine odor.
La présente invention concerne des compositions comprenant de l'ergothionéine et un absorbeur de triméthylamine. L'invention concerne également des procédés permettant de prévenir, diminuer ou réduire au minimum l'odeur d'amine et de poisson due à la triméthylamine, qui est associée au traitement et/ou à la conservation d'une préparation contenant de l'ergothionéine, par combinaison avec l'ergothionéine, pendant le traitement ou avant le stockage, d'un absorbeur de triméthylamine en quantité suffisante pour prévenir la détection de toute odeur de triméthylamine par le nez humain. L'invention concerne en outre un procédé permettant d'améliorer l'odeur de méthylamine associée à une préparation aqueuse contenant de l'ergothionéine après l'apparition d'une odeur de poisson de triméthylamine.
