ABSTRACT A device is disclosed which comprises a steam escape-duct ter- minating in a valve-seat. A shut-off surface arranged in a cap at the bottom of an axial cavity slides upon the duct and rests, in service, upon the seat. The cap is weighted in such a manner that the centre of gravity thereof is located below the seat. An axial cavity is connected to the outside by two offset vents causing the cap to rotate by reaction to the steam passing through them when the cooking pressure is reached. The device comprises an element permanently secured to the cap and displaceable manually between two positions, each determining a different lifting pressure of the cap in relation to the duct.
