A measured amount of meat is introduced into a first vessel. A measured blend of alkaline solution is also introduced into the vessel and mixed with the meat so as to ensure the surface of the meat is covered with the high pH alkaline solution. The meat is then stored for a period of time so as to ensure that any bacteria that remains alive and present at the meat surfaces becomes acclimatized to the high level pH. The meat is then transferred into a second vessel and a measured blend of carbon dioxide and water is also introduced into the second vessel. The vessel is operated at a high pressure. The high pressure favors the formation of carbonic acid, which reduces the pH to a low level sufficient to kill microorganisms residing on the meat.

Une quantité mesurée de viande est introduite dans un premier réacteur avec une quantité mesurée de solution alcaline, mélangée à la viande de façon à assurer une couverture complète de la surface de la viande par cette solution à pH élevé. La viande est alors conservée pendant une durée suffisante de façon à ce que toute bactérie présente à la surface de la viande, et restant vivante, se soit adaptée au niveau élevé de pH. La viande est alors transférée dans un second réacteur dans lequel on introduit un mélange de dioxyde de carbone et d'eau. Ce réacteur fonctionne sous pression élevée. La pression élevée favorise la formation d'acide carbonique, réduisant le pH à un niveau faible suffisant pour tuer les micro-organismes résidant sur la viande.
