The invention relates to a fruit-based packed food product such as fruit beverages or purees comprising active and stable probiotics which preferably have a concentration greater than 108 UFC/ml, a high fruit content, preferably greater than 50 %, are depleted in organic acids and in which the artificial flavour production is reduced or decreased with respect to an initial fruit substance. A method for preparing said food product is also disclosed.

La présente invention concerne un produit alimentaire conditionné à base de fruits, de type boisson ou purée de fruits, comprenant des probiotiques vivants, stables préférentiellement à une concentration supérieure à 108 UFC/ml, une teneur forte en fruits, préférentiellement supérieure à 50 % et appauvri en acides organiques, et dans lequel la production de faux goûts est réduite ou diminuée par rapport à la matrice de fruits initiale ainsi qu'un procédé de préparation d'un tel produit alimentaire.
