The invention concerns a procedure for preparing a ready-made food portion, a portion piece being frozen to a temperature at least -15 ~C, and the gravy being frozen onto the surface of the portion piece. The gravy is frozen in at least two different layers on the portion piece so that a fat-free liquid layer counteracting oxidation comes to constitute the outermost layer.

L'invention concerne un procédé de préparation d'une portion d'aliment cuisiné, ladite portion étant congelée à une température au moins égale à -15 ·C, la sauce étant elle-même congelée à la surface de la portion. Cette sauce est congelée sous la forme d'au moins deux couches différentes à la surface de la portion de sorte qu'une couche liquide sans graisse empêchant l'oxidation constitue la couche extérieure de ladite portion.
