Abstract A process and an apparatus for the Production of soluble instant coffee in powder form In an apparatus for the extraction of coffee comprising six extraction cells (1,2,3,4,5,6), means (7) are provided after the hot cells (1,2) for reducing the percolation rate in at least one cell (3) downstream of the hot cells. After at least one cell (3) where the percolation rate has been reduced, means (8) are provided for regulating the percolation flow in the downstream cells.
