ABSTRACT The invention relates to a process, in the production of link sausages of the type having a casing formed of snythetic tubular material which is filled with forcemeat and closed at its ends. The process includes the steps of bringing the moisture content of synthetic, ungathered tubular material to a level appropriate for stuffing the tubular material with forcemeat, gathering in the thusly moistened tubular material in the axial direction to condense a given ungathered length of tubular material into a much smaller axial length, and transferring the moistened, gathered tubular material to a sausage stuffing machine, and stuffing forcemeat into the tubular material, concurrently pushing out the gathered folds and closing the ends of the respective sausage links.
