A process and apparatus as described wherein shellfish waste is successively treated using sodium hydroxide to deproteinize the shells; hydrochloric acid remove minerals and ethanol to decolor a chitin product. The chitin may then be treated with sodium hydroxide to produce chitosan. The apparatus described and the apparatus in which the foregoing process is carried out is a single tank vessel where the liquid reactants are successively introduced and removed.
