Abstract Process and Apparatus for Treating and Conserving Food such as Mushrooms Company : SERATEC The process is of the kind comprising impregnating the food with a coagulant, blanching the food, filling the food into containers and subjecting the contents of the containers to a conserving treatment. The object of the invention is to increase the mass : yield obtained. In accordance with the invention, the food is impre- gnated under partial vacuum in a minimum time, the operations or evacuating the impregnation chamber, introducing impregna- tion liquid, soaking and evacuating the impregnation liquid being performed rapidly in quick succession. The invention is particularly applicable to proces sing mushrooms. Fig 4.
