The invention relates to a process for the isomerization of sucrose into isomaltulose with the aid of viable immobilized isomaltulose-forming micro- organisms. The micro-organism cells are immobilized on a carrier material comprising a granular anion exchange material. The resulting isomaltulose may be used for the production of isomalt for sweetening purposes.

L'invention a trait à une technique d'isomérisation du saccharose en isomaltulose à l'aide de micro-organismes générateurs d'isomaltulose viables et immobilisés. Les cellules des micro-organismes sont immobilisées sur un véhicule comportant une substance granulaire d'échange d'anions.
