Encapsulation process of the type consisting in causing a substance to be encapsulated to flow within a capillary tube (1), extruding the substance from the tube and axially co-extruding a polymer substance at the circumference of said tube for encapsulation of the substance. The process also consists in segmenting, by means of a vector fluid, the flow of the substance to be encapsulated prior to its extrusion, lowering the temperature of the formed capsule, and then exchanging the solvent contained in the polymer solution for a non-solvent. The invention also concerns a device for carrying out the process of the invention.
