Disclosed is a process for extruding and coating foodstuffs, wherein the foodstuff is extruded by means of an extruding device and, following extrusion, is cut off using a cutting device, the material being sprayed with at least one additive after leaving the extrusion die and prior to cutting. Also disclosed is a device for carrying out the process, having a barrel extruder for advancing the material to be extruded, which is extruded through an extrusion die, and following extrusion, cut off using a cutting device with at least one spray device being used to spray at least one additive onto the external material prior to cutting.

L'invention concerne un procédé d'extrusion et d'enrobage d'aliments, selon lequel l'aliment concerné est extrudé à l'aide d'un dispositif d'extrusion et est ensuite découpé après cette opération, à l'aide d'un dispositif de coupe (4, 5). Après avoir quitté la filière d'extrusion (2), avant d'être découpé, le produit (11) est recouvert d'au moins un additif, par pulvérisation. L'invention concerne en outre un dispositif de mise en oeuvre dudit procédé, qui comprend une vis d'extrudeuse servant à amener le produit (11) à extruder, ledit produit étant extrudé en passant à travers une filière d'extrusion (2) et découpé après cette opération à l'aide d'un dispositif de coupe (4, 5). Au moins un dispositif de pulvérisation (7) sert à recouvrir le produit extrudé (11), avant la découpe, d'un additif.
