A process and devices are disclosed for producing rolled wafer cones to be industrially filled with ice-cream and frozen for storage. The process is characterised by the following steps: (a) a dough with a high sugar content is poured on an endless, continuously moving heated baking surface, forming a strip of dough; (b) the strip of dough is baked into a thick, preferably one to several millimetres thick strip of wafer; (c) the baked strip of wafer is compressed in its plastically deformable state preferably up to maximum two thirds of its original thickness and at the same time or afterwards it is cut into individual pieces of wafer; (d) the individual pieces of wafer are rolled in the usual manner into cones.

Un procédé et des dispositifs servent à produire des cornets de glace enroulés destinés à être industriellement remplis de crème glacée et conservés à l'état congelé. Le procédé se caractérise par les étapes suivantes: (a) on verse une pâte à haute teneur en sucre sur une surface chauffée de cuisson, en sans fin et en mouvement continu, de manière à former une bande de pâte; (b) on cuit la bande de pâte jusqu'à obtenir une bande épaisse de gaufre d'un ou plusieurs millimètres d'épaisseur; (c) la bande cuite de gaufre est tassée dans son état plastiquement déformable jusqu'à de préférence deux tiers de son épaisseur originelle au maximum, et découpée en pièces individuelles de gaufre pendant ou après son tassement; (d) les pièces individuelles de gaufre sont enroulées en cornets de la manière usuelle.
