ABSTRACT OF THE DISCLOSURE A process for the mechanical filleting of a fish, wherein one paring incision each is made in each side of the non-decapitated fish before or between the making of plurality of filleting cuts in the fish, said paring incisions cutting under and severing the gill covers with the part of the head underneath and in front of the respective gill cover from a central web remaining on the fish and con- taining the mesial plane of the fish head and parts of the cranium, and a fish filleting machine for carrying out said process comprising apart from usual filleting tools a pair of paring knives to be pivoted between an inoperative position clear of the fish and an operative position in the path of the fish conveyed through said filleting machine at a point behind belly filleting knives and in front of at least one of back filleting knives and rib knives. - I -
