Abstract of the Disclosure This invention is an improved method and package for chilling and storing poultry comprising the steps of washing the eviscerated poultry with high pressure water to thoroughly clean the bird inside and out; packaging the bird in a heat shrinkable thermoplastic receptacle; evacuating, closing, and shrinking the receptacle; and then chilling the bird to remove the body heat and bring it to a temperature in the range of 26 to 34°F. This method is in contrast to prior art methods wherein evacuation of the package, if dons at all, takes place after the poultry has been chilled whereas in the present method the bird is vacuumed packaged without cooling and the carcas? is near its live body temperature. Advantages of the subject method are that moisture is reduced significantly so that no purge is present to leak from the bag; shelf life is extended from 12 to 15 days to approximately 30 days; taste of the product is improved; and, water and refrigeration are need at the processing plant.
