ABSTRACT OF THE DISCLOSURE Triglycerides are determined by enzymatic saponifica- tion with lipase in a buffer in the presence of a carboxyl- esterase and an alkali metal or alkaline earth metal alkyl sulphate, the alkyl radical of which contains 10 to 15 carbon atoms, wherein a compound of the general formula RO(CH2CH2O)nH, in which R is an alkyl or alkenyl radical containing 14 to 20 carbon atoms and n is a number of from 7 to 20, is also added.
