It is intended to provide a process cheese obtained by blending 1 to 50% by weight of a starting cheese material having been heated at a high temperature of 110°C or above with the starting materials of the process cheese, which has a viscosity required for the production in the heating and melting step and shows, after cooling, favorable physical properties, an excellent flavor, an excellent texture, a high meltability in mouth and good keeping qualities.
L'invention concerne un fromage fondu obtenu en mélangeant 1 à 50% en poids d'un matériau de fromage de départ ayant été chauffé à une température élevée de 110°C ou au-dessus avec les matériaux de départ du fromage fondu, qui a la viscosité nécessaire pour la production dans l'étape de chauffage et de fonte, et démontre, après refroidissement, des propriétés physiques favorables, un excellent goût, une excellente texture, une excellente aptitude à fondre dans la bouche et de bonnes qualités de conservation.
