Elemental sulphur is converted into sulphide by bioconversion, by incubating in the presence of a reducing sugar with a micro-organism which can be used in food, in particular baker's yeast. In order to prepare a flavouring agent of the toasted cheese type, the incubation reaction medium is heat treated. It is possible, advantageously to use the reaction medium containing the flavouring agent or its reactive precursor as a raw material for the preparation of process flavours, of the meat type, mixed with other materials rich in precursors and/or flavour enhancers.
