ABSTRACT OF THE DISCLOSURE A process for converting tree bark into microbial or single cell protein in which finely divided, milled tree is extracted in dilute aqueous alkali solution and then fer- mented, under carefully controlled conditions of temperature and agitation, with a selected white rot fungi. The fungi breaks down cellulose in the bark to form a microbial which is relatively high in protein and which can be used as an animal feedstuff or further processed to produce an alkali soluble protein concentrate. A particularly suitable fungi is Phaneruchaete chrysosporium.
