ABSTRACT OF THE DISCLOSURE A process for decaffeinating green coffee by treatment with an organic solvent. The solvent residues are removed by steaming. The solvent employed is an acetal of the general formula: Image wherein R1 is hydrogen or methyl and R2 and R3 are methyl or ethyl. The acetals have high selectivity for caffeine are easily removed from the coffee after use and have no effect in the taste of the coffee.
