A process for decreasing the reducing sugars content of light steepwater comprising complementary incubation of light steepwater from a corn steeping process having sulfur dioxide (SO2) content at between about 20 ppm and about 220 ppm for at least about 5 hours. The process is particularly useful for obtaining Pharmaceutical Industry Grade Steepwater.

Procédé permettant de réduire la teneur en sucres réducteurs d'une eau de trempe légère comportant une incubation supplémentaire de l'eau de trempe légère issue d'un procédé de macération du maïs à une concentration de dioxyde de soufre (SO2) d'environ 20 ppm à environ 220 ppm pendant au moins 5 heures. Le procédé est particulièrement utile pour obtenir une eau de trempe de qualité pharmaceutique.
