A B S T R A C T A process for converting granular starch to a soluble hydrolysate wherein any unconverted starch retains its granular nature. The conversion is accomplished by means of a bacterial alpha-amylase and at least one saccharification enzyme. Novel soluble starch hydrolysate products produced include those having a dextrose equivalent value from about 40 to about 60, containing by weight on a dry basis generally a minor amount of monosaccharides, predominant amounts of disaccharides and trisaccharides, and a minor amount of polysaccharides having a degree of polymerization of four or more.
