A process is disclosed for extracting lipid fractions from phospholipid-containing powdery egg products. The egg products (a) are first treated with liquid propane at a pressure 200 bars and a temperature 70°C; then (b) are treated with a mixture of liquid propane and an entrainer consisting of an aliphatic alcohol with 1 to 4 C atoms. It is thus possible to produce lipid fractions having good sensory properties with a phospholipid content of at least 25 % by weight and up to 80 % by weight.
