A frost produced by the condensation of carbon dioxide charged with roasted coffee aromas and with water is contacted with a first oil, the oily phase is eliminated and the aqueous phase obtained is contacted with a second oil. The oil obtained is incorporated in a coffee powder.

Un gel produit par condensation de dioxyde de carbone, chargé d'aromes de café torréfié et d'eau, est mis en contact avec une première huile, la phase huileuse est éliminée et la phase aqueuse obtenue est mise en contact avec une seconde huile.
