ABSTRACT A warm coffee extract is applied onto a freezing surface in a plurality of layers until a desired thickness is obtained. Thus applied, there is continual melting and re- freezing of the extract. This permits the formation of large ice crystals whereby the finished product is darker and more coffee-like in color. Overall efficiency of the freezing process is also increased allowing higher productivity rates.
