ABSTRACT A process for increasing the solubility of gelatin is disclosed. The process involves subjecting gelatin having a water content of more than 8% by weight to a dielectric heat treatment using microwave radiation to remove at least 35% of the water content to obtain a treated gelatin having a water content of no more than 16% by weight. The treated gelatin is soluble in cold water and can be used for any of the purposes for which ordinary gelatin is employed, and particularly in the preparation of foodstuffs.
