A method for producing dehydrated potato chip slices specifically suitable for making French fries and French fries produced therefrom, utilizes the application of microwave energy under selected vacuum conditions and a specific range of microwave energy application to produce a dried potato having a water activity no more than 0.85.

Selon un procédé qui permet de produire des tranches de pommes de terre déshydratées particulièrement bien adaptées à la fabrication de frites, ainsi que de produire des frites à partir desdites tranches de pommes de terre, on utilise une énergie micro-ondes dans des conditions de vide sélectionnées et une plage spécifique d'énergie micro-ondes afin de produire des pommes de terre déshydratées ayant une activité de l'eau inférieure ou égale à 0,85.
