PRECIS DE LA DIVULGATION On prépare une composition renfermant du gras de beurre ou du gras solide et de l'eau, à raison de 50 à 65% en poids d'eau et 30 à 50% en poids de gras, que l'on introduit dans un émulsifieur mécanique comportant au moins un anneau de couteaux circulaires. La composition subit alors une fragmentation pour donner un beurre ou succédané de beurre stable réduit en calories renfermant le gras et l'eau sous forme substantiellement solide.
