An extrusion/cooking process for transforming low fat beans into a water reconstitutable bean product comprises introducing a low fat bean grind into a co-rotating twin screw extruder. The bean grind has a particle size in the range of 20 mesh to 120 mesh. The twin screw extruder has first, second and third processing zones, where in each processing zone a bean grind is heated, cooked, kneaded and converted to a suitable mass for extrusion. The bean material is extruded and treated to form the desired bean product. The bean product may be in the form of pellets or flakes. The bean product may be treated with a fat to extend the reconstituted shelf life of the product.
