ABSTRACT OF THE DISCLOSURE Pyruvate oxidase is produced by a process which comprises culturing A pyruvate oxidase-producing microorganism belonging to the genus Pediococcus, Streptococcus or Aerococcus in a nutrient culture medium, and isolating the pyruvate oxidase thus produced from the culture. also provided by the invention disclosed herein is an analytical method for pyruvic acid in a sample containing pyruvic acid or a system which liberates this acid, which comprises treating said sample with a reaction system containing pyruvate oxidase, and measuring the consumed component or generated component.
