The process comprises initially matching a cylinder with the oulet of a dough storage hopper; filling by absorption said cylinder prior to the lowering of the piston; rocking the cylinder sideways, to effect an initial pressing and homogenization of the dough, and rocking again the cylinder under the hopper and returning, by upward displacement of the piston, part of the dough to the hopper, said portion of dough corresponding to the difference between initially absorbed and the preset amount of dough, according to the equivalence between the displacements of the piston itself and the number of impulses generated by an impulse generator, in operational combination with a pressure switch. Once the desired resulting dough is obtained, the cylinder is rocked towards the opposite side, and the resulting portion of dough is expulsed and collected on a conveyor belt.
Le procédé consiste tout d'abord à mettre en vis-à-vis un cylindre et la sortie d'une trémie de stockage de pâte à pain, remplir par absorption ce cylindre avant la descente du piston; faire basculer le cylindre latéralement pour effectuer dans cette position un pressage initial et une homogénéisation de la pâte, puis faire basculer à nouveau le cylindre sous la trémie et faire revenir, par déplacement ascendant du piston, une partie de la pâte à pain dans la trémie, cette partie correspondant à la différence entre la quantité de pâte à pain initialement absorbée et la quantité préétablie, en accord avec l'équivalence entre les déplacements du piston lui-même et le nombre d'impulsions produites par un générateur d'impulsions, en combinaison opérationnelle avec un présostat. Une fois obtenue la quantité souhaitée de pâte à pain, le cylindre bascule vers le côté opposé pour effectuer l'expulsion de ladite quantité de pâte à pain et la récupérer sur une bande transporteuse.
