Provided is a process for removing non- choline phosphatides (5) from a lecithin mate- rial (I) to facilitate obtaining a highly purified phosphatidylcholine product (11) which is es- sentially free of non-choline phosphatides. The product can be obtained efficiently and effec- tively, even when starting with a raw soybean gum (lecithin).

Ce procédé a pour but d'éliminer, d'une lécithine (1), les phosphatides ne contenant pas de choline (5) pour faciliter l'obtention d'une phosphatidylcholine hautement purifiée (11), c'est-à-dire essentiellement exempte de phosphatides ne contenant pas de choline. Cette phosphatidylcholine peut être produite de manière efficiente et efficace, même à partir d'une gomme de soja brute (la lécithine).
