The packaging of fresh meat in a case-ready condition is done by first cutting fresh meat into small, case-ready cuts of a size to be packaged and displayed to purchasers by posi- tioning the packaged cuts in a retailer's meat case. At least one of the case-ready cuts is placed on each of a plurality of supporting trays sized for deposit and display in the meat case. The meat cuts on the trays are surrounded with a pre- selected gaseous atmosphere. Each of the trays and the meat cuts thereon is covered with a flexible, gas permeable film of transparent synthetic resin to enclose the meat cuts and pre- selected gaseous atmosphere therein. The trays are then placed in a gas impermeable container; and surrounded with a controlled gaseous atmosphere, the container being sealed to retain the controlled gaseous atmosphere therein.
