2055455 9012858 PCTABS00002 Triglycerides of long-chain fatty acids (e.g. polyunsaturated acids) are prepared in high yield and purity by lipase-catalyzed interesterification of a long-chain free acid or lower alkyl ester thereof with a triglyceride of a short-chain acid. Short-chain free acid or a lower alkyl ester thereof is formed during the reaction, and utilizing its relatively high volatility is removed simultaneously by evaporation.
